Oil-free Herby Creamy Potato Salad

Silky, and creamy, melt in your mouth potato salad. It's oil-free and guilt-free, so it's ok to get another serving if you wish! Add texture and flavor by adding a few shakes of Sea Superfoods Sprinkles!

INGREDIENTS

• 1 kg potatoes, cooked and cooled completely
• mixed fresh herbs, chopped
• 2 tbsp capers
• Pimp My Salad Sea Superfoods
• DRESSING
• 300g silken tofu
• 40g cashews
• 1 tbsp apple cider vinegar
• 1 tbsp lemon juice
• 1 1/2 tsp dijon mustard
• 1 tsp sugar
• 1/2 tsp salt
• 1/2 tsp onion powder
• 1/2 tsp garlic powder
• cracked pepper, to taste

METHOD

1. Place all your dressing ingredients in a blender or food processor and blend until smooth and creamy.
2. In a large bowl, place all your salad ingredients and mix until all potatoes are coated with the dressing and the herbs. 
3. Serve in your favourite Coconut Bowls and sprinkle some Sea Superfoods crunch for texture. Enjoy!
