Dried mango, 120 g (no sugar added)
Natural Cashew Nuts, 150 g
Unsweetened Dessicated Coconut, 40 g (plus extra for rolling)
Turmeric, 1/2 tsp
Lime, 1 (zest only)
Maple Syrup (optional)
Soak the cashews in hot water and the mango in room temperature water for 30 minutes. Drain and rinse.
Add all the ingredients to a food processor and mix untill it formes a dough. I like to leave small pieces of mango and cashew for the texture.
Roll into balls and coat with coconut. Store in an airtight container in the fridge for a week.
