Winter Warming Butternut Curry Soup

Whenever cold weather can be felt, stock up on winter warming recipes and start with this butternut curry soup! This is creamy, flavourful and definitely warming. One bowl will surely keep you warm and cozy.

INGREDIENTS

• Butternut Pumpkin, 1 (diced)
• Onion, 1/2 (finely sliced)
• Garlic, 2 cloves
• Extra Virgin Olive Oil, 1/2 tbsp
• Curry Powder, 1 tbsp
• Paprika, 2 tsp
• Salt & Pepper, to taste
• Coconut Milk, 1/2 tin
• Vegetable Broth, 2 cups

METHOD

1. Heat a pan over a medium heat. ⁣
   Once hot, add oil, garlic and onions, fry off until softened.⁣
2. Add pumpkin, curry, paprika and some salt and pepper to taste, mix through with the onions and garlic. Cover and leave to cook until the pumpkin begins to soften. ⁣
3. Pour in broth and coconut milk and cook until lightly boiling. Cover again and cook on a low heat until the pumpkin is well done. ⁣
4. Transfer the soup to a food processor and blend until creamy and smooth, taste and add more salt, curry and pepper to taste. ⁣
5. Pour into your favourite Coconut Bowls, top with drizzles of coconut milk/cream and plenty of Top That! Toppers. Serve with warm bread for dipping! Enjoy!
