Salted Caramel Truffles by @theblysslife. Totally the best combo especially for a truffle! Bite into these goodies and fill yourself with energy.
MAKES 18 TRUFFLES
Pecans, 1/2 cup
Medjool Dates, 10-12
Chocolate Chips, as needed (melted)
Sea Salt, as needed
Soak pitted dates in hot water until soft. In food processor add dates, pecans and a couple dashes of pink salt.
Blend until creamy. You can blend a little if you want it to be a bit more chunky. You may need to add some of the hot water from the soaking dates so it is easier to blend.
Let chill for 10 minutes in fridge. Roll into balls and place in freezer or fridge until chilled / slightly firm.
Dip in melted chocolate and sprinkle with pink salt.
