
- 1 1/2 cups of coconut milk or other you like
- a handful of lamb’s lettuce and spinach
- a small handful of strawberries
- around 1/2 cup of cooked and frozen courgettes
- a spoonful of yogurt
- 2 heaped tbsp of vanilla plant-based protein
- extra water or milk to reach a creamy consistency you like
To make the strawberry chia pudding:
- 1 cup of plant milk of choice
- 1/4 cup of chia seeds
- 1 tsp of beetroot powder for extra color, optional
- 1/2 tsp of vanilla extract
- 2 heaped tbsp of strawberry yogurt or plain yogurt and strawberry jam
Mix together in a bowl/jar and let sit for 20-30 minutes or, even better, place in the fridge overnight. You can make a big batch and use it during the week.
