Peanut Butter Acai Bowl

  

This is my personal favourite breakfast, a go-to no matter the season. Making the acai yourself is the best – you can be assured that you’re getting all the nutrients from the antioxidant rich berry (rather than the diluted café variety that is often laden with sugar), and you get the added satisfaction of a homemade meal. It’s easy too – just blend a pure acai pack (unsweetened) with frozen banana, blueberries, coconut water, and peanut butter. For a morning boost, I like to add superfood powders or plant-based proteins, but this is totally up to you.

Serves 1

INGREDIENTS
  • Unsweetend Acai Sachet, 1 (frozen)
  • Banana, 1 (frozen)
  • Blueberries, 1/2 cup (frozen)
  • Coconut Water, 1/3 cup
  • Peanut Butter, 1 1/2 tbp
  • Vegan Protein Powder, 1 tbsp (optional)
METHOD
  1. Combine all ingredients in a high-powered blender, blend until smooth and creamy.
  2. Spoon into your favourite Coconut Bowls and add desired toppings. Enjoy!
