Carrot Cake Porridge

SERVES 1-2
INGREDIENTS
- CARROT CAKE PORRIDGE
- Carrot, 1 large (grated)
- Raisins, 2 tbsp
- Cashew Butter, 1 tbsp
- Gluten-free Oats, 1 1/2 cups
- Almond milk, 2 1/2 cups
- Maple Syrup, 1 tbsp
- Ginger Powder, 1/3 tsp
- Cloves, 3
- Nutmeg Powder, a pinch
- Cinnamon Powder, 1/2 tsp
- Himalayan Salt, a pinch
- OPTIONAL TOPPINGS
- Coconut Yogurt
- Apricot Jam
- Cinnamon Granola
- Kumquats
- Millet Puffs
- Chopped Pecans
METHOD
- Combine all ingredients in a saucepan and cook on low heat for about 10 minutes. Add more almond milk if too thick and dry.
- Toppings are optional but highly recommended!
- Cool down for a few minutes and serve this with your favourite Coconut Bowls and enjoy!
