Embark on a culinary fairy tale with Rapunzel's Hazelnut Soup! Let the rich aroma enchant your senses as you savor every spoonful of this magical, heartwarming creation. Try this soup that's fit for a fairy tale feast!
INGREDIENTS:
• ½ butternut squash
• 3 parsnips
• 1 yellow onion
• 2 tbsp vegan butter for frying
• 500 ml hazelnut milk
• 200 ml water and 1 vegetable stock cube or 200 ml vegetable stock
• Salt
GARNISH:
• Chopped hazelnuts
• Cinnamon
• Thyme
DIRECTIONS:
1. Start by preparing the vegetables. Chop the butternut squash, parsnips, and yellow onion.
2. Heat up a saucepan or soup pot and melt the butter. Add the onion and cook until they start to soften.
3. Add the butternut squash and parsnips.
4. Stir in the hazelnut milk, water, vegetable stock, and salt. Cook until the butternut squash and parsnips have softened and cooked through.
5. Remove the soup from the heat, add it to your blender, and blend until smooth and creamy.
6. Serve in a coconut bowl with some chopped hazelnuts, cinnamon, and thyme.
