This Fudge Brownie Protein Truffles by @run2food is just incredibly luscious, rich and decadent.
MAKES 8 TRUFFLES
Almonds, 1 cup
Cocoa Powder, 2 tbsp
Vegan Chocolate Protein Powder, 1/4 cup
Dates, 1 cup (pitted and soaked, reserve 1/4 of the water)
Vegan Chocolate, 100 g
In a food processor, blitz the almonds until it resembles a fine flour.
Add in the cocoa powder & protein powder and briefly process to combine.
Add the the dates and date water and process until the mixture clumps/sticks together. If it doesn’t then you may need to add more liquid
Form the mixture into 8 evenly sized balls and freeze for 30 mins.
Melt the chocolate and roll the balls in the chocolate to coat. Return to the freezer for another 15 minutes to set.
