Nice cream has never looked so good. This recipe is a bit different to most in that it actually contains a few veg! Don’t be scared, you can’t taste it. It just helps to bulk it up (who doesn’t love a big bowl of nice cream), as well as creating the great texture AND adding to the nutritional value. Don’t forget to go wild with toppings…. we’re all about that chocolate drizzle!
Sweet Potato Chunks, 1/2 cup (pre-cooked)
Cauliflower Rice, 1/3 cup (frozen)
Banana, 1 (frozen)
Chocolate, 1/2 packet
Cacao Powder, 1 tbsp
Almond Butter, 1 tbsp
Cinnamon, 1 tsp
Ginger Powder, 1/2 tsp
Nutmeg, 1/2 tsp
Almond Milk, 1/3 cup
Combine all ingredients in a high-power blender, blend until creamy.
Spoon into your favourite Coconut Bowls and top with chocolate (melted and chunks) and raw almonds.
