Creamy and cheesy pasta using 100% plant-based ingredients is now achievable with this recipe!
Pasta, 1 pack (cooked)
Sweet Potato, 1 large
Small Potato, 1
Cashews, 1/2 cup (soaked)
Onion, 1 small
Garlic, 2 cloves
Oil, 1 tbsp
Plant-based Milk, 1/3 cup
Nutritional Yeast, 1-2 tbsp
Cayenne Pepper (optional)
Salt & Pepper (to taste)
Peel and chop potatoes and place into saucepan with water and cook until softened.
Add onion, garlic and a little oil and saute until cooked. Remove from heat and set aside.
Cook pasta as directed.
Add cooked onions, potatoes, cashews, plant based milk and herbs into a blender and blend until smooth.
Pour sauce into a pot and cook until sauce thickens.
Add cooked pasta into the sauce pot and coat with the sauce.
Pour into your favourite coconut bowl with fresh kale. Enjoy!
